    Mizu Yokan/Azuki Jelly

    Mizu Yokan is a sweetened gelatin of azuki bean paste perfect for a hot day.

    Ingredients

    1/3 oz ito kanten, soaked overnight and drained well
    4 tbsp sugar
    1 cup azuki bean paste

    Method

    In a pot, boil the ito kanten and 2 cups of water until it is dissolved. Add the sugar and when the sugar dissolves, strain the liquid into another pot and return it to heat. Add the bean paste and stir until smooth.

    Remove from the heat and cool slightly. Then pour it into a damp rectangular mold. Cover and chill overnight.

    Serve in slices.
