Ingredients

1 cup cake flour, sifted
1/2 cup rice flour, sifted
1 1/2 cup dark chocolate, chopped roughly
3 tbsp orange liquer
2/3 cup sugar
1 tsp salt
6 eggs, seperated

Method

Combine the flours.
Combine the chocolate and 4 tbsp of water over a double boiler. Stir until melted then add the orange liquer. Remove from heat and beat in the eggs, one at a time. In a seperate bowl, whip the egg whites, gradually adding the sugar until stiff peaks form. Fold 1/4 of the whites into the chocolate mixture gently, and the remaining into the flour. Then add the flour to the chocolate gently.

Pour into a waxed paper lined dish then place into a steamer and cook for 45 minutes.

Remove from the dish and let cool in the waxed paper covered with a cloth. As a garnish, a piece of candied orange peel can be placed with a slice of the cake.
