Matcha Mousse

Green tea makes this smooth dessert spectacular.

Ingredients

1/3 oz ito kanten, (agar agar strings) soaked in cold water overnight
1/3 cup sugar
2/3 cup whole milk
4 egg yolks
2 tsps powdered matcha, mixed with 2 tsp hot water
1 cup cream
shaved bittersweet chocolate for garnish (optional)

Method

Drain the ito kanten, and gently squeeze to remove all the water. Then boil it with ½ cup of water, stirring over medium heat until it all dissolves. Add 1 tbsp of the sugar to it and stir until it dissolves.

Add the milk and bring it to a near boil. Transfer to a small bowl and cool. In a separate bowl, beat the yolks and remaining sugar, then place in a bain marie and beat until thickened. Slowly add the brewed matcha and stir.

Add to the egg mixture little by little to the ito kanten mixture, whisking. In a separate bowl, beat the cream until soft peaks form and add to the egg mixture, continuously beating. Transfer into separate serving glasses and chill, covered, overnight. Garnish with chocolate before serving.
