Udon with a flavourful sesame dipping sauce is delicious and refreshing the summer.

Ingredients

1/4 cup shoyu
1/4 cup mirin
1/2 cup katsuobushi
3/4 cup toasted white sesame seeds, over half of it ground into a paste using a mortar and pestle.
1 tbsp grated ginger

Method

Combine the shoyu, mirin, and 1 1/3 cup water and boil. Reduce heat, and add the katsuobushi. Bring to a near boil then remove from heat. Rest for 5 minutes, then strain the liquid.

Add the ground sesame to the liquid and stir to smooth. Then add the ginger and stir.

Chill and serve with chilled udon. It can also be served with somen, but the sauce should be thinned with some water before serving, as it may be too thick for these thin noodles.
